This week’s recipe for Cook the Book Fridays comes from Dorie Greenspan’s cookbook, Everyday Dorie.
Mostly Rhubarb Pie (p 288) is a sweet tart dough crust filled with custard and (mostly) rhubarb and strawberries. I was still trying to clean out my large chest freezer so I used a pre-made crust – a little more fragile than a sturdy pie dough but still did the job.
My rhubarb wasn’t particularly pretty – more green than pink so my finished product is not nearly as pretty as Dorie’s (see below for a link). I have to say I wasn’t much of a fan of this – it was perfectly lovely but I prefer a galette with summer fruits – wasn’t a fan of the custard. Others who enjoyed this LOVED it so I’m guessing it’s just a “me” thing! Probably not a repeat but I’d definitely make a rhubarb/ strawberry galette!

Bummer it wasn’t a favorite, but just how it goes sometimes! Looks pretty.
The rhubarb flavor turns mild with the sugar and I tone it down further by not using as much. I see that your rhubarb is more green than red. Rhubarb is not everyone’s favorite for a reason. Your tart looks wonderful!
