
This week’s Tuesdays with Dorie recipe is from Dorie Greenspan’s Baking with Dorie and comes together in a flash – true to its name (Whip-it-up-quick cornbread). If you have the base ingredients on hand, you can be enjoying this within an hour or so!
Since there are just two of us, I made half the recipe in a loaf tin (the original recipe calls for you to bake it in a cast-iron skillet which would be brilliant too!) and it took slightly longer to bake than the 20 minute in the original version of the recipe (total cook time was around 25 minutes).
The base recipe is a perfect blank canvas for add-ins and Dorie offers a bunch of suggestions – bacon, cheese, jalapeños, corn, scallions, herbs etc… I used green onions and corn as that’s what I had on hand – I definitely think jalapeños might be added the next time to give this a bit of a kick.
This is sweet and crumbly and moist – pretty perfect cornbread as they go! I tasted a piece when I baked it and have wrapped and stored the rest for Wednesday when I’m making chili with my cooking club – it’s going to be the perfect match!

This bread will be definitely a perfect accompaniment for chilli, we had it with a hearty soup a fortnight ago.

This cornbread is delicious. No add ins other than cheese for me because of the audience but it was sooo good.
I also thought this was pretty perfect– one of the best cornbreads I’ve made. Bet it was great with that chili!
