This week’s recipe for Cook the Book Fridays comes from Dorie Greenspan’s latest cookbook, Everyday Dorie and is a perfect dish to make for a weeknight meal, a casual dinner with friends or really, anytime. It’s SO easy to put together, uses one pan and makes the house smell amazing! We ‘ve made this so many times since we got Everyday Dorie – it’s a fave because it uses ingredients we most often have on hand so it’s easy to pull together at the last minute.
It might have been our chicken but the last time we made this, we found there was a lot of liquid in the bottom of the pan which didn’t help the potatoes crisp up like we like them so when the chicken was cooked, we removed it from the tray and kept it warm, drained off some of the liquid and popped the veggies under the broiler (grill) for a few minutes. Result? Tender chicken and crispy potatoes!
(and no, we’re not sure why that ONE piece of chicken didn’t colour!)
