This week, the Tuesdays with Dorie recipe from Baking Chez Moi is a peach pie of the best kind. Made with Dorie’s sweet tart dough, this pie/ tourte is filled with fresh peaches that have spent some time in some brown butter (to give them a lovely nutty flavour). SO good, especially now when peaches are in season.
I made this over two days – prepping the tart shell and partially baking it and prepping the pastry for the top on one day and assembling and baking the next. I’m no expert when it comes to double shell pie crusts so mine had a few cracks along the edges…
And when I cut into it, I ignored Dorie’s instructions to wait until it was cool to cut because mine all fell apart…
I actually didn’t eat a slice of this. As I was cutting it for the photos, swarms of neighbours appeared (yes, really, three houses’ worth!) and I cut slices for everyone, reserving one for Neil. I tasted the broken bits of tart shell (YUM!) and got a small bowl of the filling that had spilled out and enjoyed it with ice cream.
Because pie is for sharing, right?

Yes, pie is for sharing. This tourte turns out bigger for some reasons. I should have given some away or have you take a piece of mine. A nice good looking slice in the photo.
