For this month’s Penotti Canada recipe, I chose to work with the Duo Penotti Hazelnut and Vanilla Spread (which contains no artificial colours, flavours or preservatives and is made with sustainable ingredients). It has a really subtle hazelnut flavour and is fairly sweet and I enjoyed it sparingly on toast, it’s just the thing when you want a little something sweet but not a pastry! As I was contemplating the many recipes where this would work, I imagined it would do really well in a no-bake energy bite –as a teacher, my mind is most definitely on “back to school” and I’m always looking for easy after-school snacks to make ahead of time that will keep my hunger at bay until dinner time. These types of snacks are sometimes sweetened with powdered sugar but the Hazelnut and Vanilla doesn’t need anything else, it’s sweet enough! Perfect with a glass of milk or a cup of coffee!

No bake hazelnut vanilla energy bite recipe on eatlivetravelwrite.comHere, I’ve used crispy cereal and dried cranberries as well as a touch of flax seed but the possibilities for this recipe are really endless. Change up the cereal, use a different dried fruit, add some nuts… the sky’s the limit. These keep very well stored in the fridge for up to a week so make a batch on a weekend and you’ll have after school snacks sorted for the week ahead.

Easy no-bake hazelnut vanilla energy bites.

Ingredients
Instructions
  1. Line a large baking tray with parchment paper.
  2. Mix all ingredients in a mixing bowl.
  3. Use a 1 tablespoon cookie scoop to portion the mixture and gently roll each portion in your hands. Place on the baking tray lined with parchment paper.
  4. Place the baking tray in the fridge for a minimum of 30 minutes.
  5. Store the bites in the fridge in an airtight container.
