Tuesdays with Dorie (Baking Chez Moi): Edouard’s Chocolate Chip Cookies

Dorie Greenspan Edouards Chocolate Chip Cookies from Baking Chez Moi on eatlivetravelwrite.comI can’t think of a better recipe to share for this week’s Tuesdays with Dorie post than Edouard’s Chocolate Chip Cookies. Right on the heels of Dorie’s #CookiesAndKindness launch,I couldn’t NOT share these cookies with you (#cookiesandkindness is all about baking something with the express purpose of sharing it with someone who needs a little extra sweetness in their life), These cookies (named for Edouard Bobin of Le Pantruche in Paris who shared the recipe with Dorie) are “chubby, chewy and just a little soft at the center” according to Dorie. They are tiny as well (meaning, well, you can eat more than one, right?) – made using a 1 1/2 tablespoon cookie scoop – and ever so cute.

Dorie Greenspan Edouards Chocolate Chip Cookies on eatlivetravelwrite.comThe recipe uses all-purpose flour as well as almond meal – you can actually see the almond pieces in mine as I used my “sifted off” bits (that are too large to bake macarons with – I sift the almond meal if I think it’s going to be too rough and keep the rejected bits to use in cookies and other baking) – but I kind of like that it gave it a little bit of texture without it being larger pieces of nuts.

These, I’ll be making again. I baked off most of them but saved 10 scooped out balls of cookie dough which I froze then baked from frozen. What a treat for a rainy Saturday afternoon. Or, you know, anytime…

We loved these as well. My DH dipped them in milk a bit messy. Love your photo.

What a good idea to use the leftover coarse almond flour to bake cookies? Glad to learn some new tricks.
