
This week’s Tuesdays with Dorie recipe comes from Dorie’s latest book, Dorie’s Anytime Cakes! Banana Cappuccino Cake Cake was the perfect cake for me to make this past weekend and teach my dad how to make a little layer cake at the same time!
This really is a pretty easy cake as you can just mix everything by hand…

Yep, I taught dad how to use the scale to add ingredients one by one so as to lessen the dirty dish load at the end!

Ingredients include coconut oil (in place of butter), bananas, coconut and coffee – a fabulous combo, in my opinion. The cake baked up fine (but it needed about 32 minutes to fully bake in the centre as opposed to the 20-25 listed in the recipe) and dad learned how to make the icing too – butter, cream cheese and icing sugar (with a touch of lemon zest).

When it was complete, I realised there was a LOT of icing for the cake (knowing I wasn’t going to ice the sides) so we sliced the cake in half and make it a small layer cake. Dad learned how to use an offset spatula too!

It sliced up beautifully and cleanly too!

Verdict: This was a lovely banana cake (as opposed to bread) – it was a bit denser than I thought it would be and a small slice is enough. You absolutely could not taste the coffee flavour at all (I realised this after licking some of the batter from the bowl) which is why I went with some lemon zest in the icing instead of coffee. An excellent first foray into the world of layer cakes for my dad, though!

ADORE the fact that you made this with your Dad (or actually your Dad made it with your tips 🙂 – how special ! When I first read the recipe I thought it would be a lovely layered cake but feared I did not have enough icing, even though Dorie said there would be tons. As always I should have trusted Dorie and next time I’ll be putting some in the middle. Great job to both of you !!
I love the idea of making this a layer cake AND that you got to share your love of baking with your dad. I have that same mixing bowl in a different color.
I agree- this cake was smashing. I found the banana was balanced out so it wasn’t prominent. I agree on the baking time too. I halved the icing so that the cake didn’t disappear under the icing.

Love the tutorial with your Dad, so cute. My espresso powder was quite strong so I tasted the coffee flavor. Good catch on cooking it extra, I should have done 32 minutes. But your layer cake came out perfect.
