Tuesdays with Dorie: Park Avenue Brownies from Baking with Dorie

This week’s Tuesdays with Dorie recipe comes from Baking with Dorie. Park Ave Brownies was my first bake for the summer in my French kitchen and it couldn’t have been more perfect! SO easy, so few ingredients (and ones I already had on hand – bar the cocoa powder that I must have finished last trip and didn’t replace but 2 tablespoons didn’t make much difference) and the perfect way to end any meal!

This recipe starts with melting butter and chocolate over a bain-marie, then stirring in the brown and white sugars. After that you add the eggs and whip until the mixture is lovely and smooth and shiny, then you add the dry ingredients (flour and cocoa – it in my case, just the flour). Dorie tops hers with chopped walnuts but I have walnut-haters in my life (! I KNOW!) so I used some flaked almonds that needed using up – it was perfect – they toasted slightly as the brownie baked.

Dorie calls for 27-30 minutes at 325˚F and these took a full 30 minutes. I let them come to room temperature before slicing and they were an excellent texture – just as you always hope a brownie is – not too cakey but not too gooey – JUST RIGHT!

These were so easy and so good that I’ll be teaching my dad how to make these 🙂
