Tuesdays with Dorie: Morning Bundt Cake Muffins from Baking with Dorie

This week’s Tuesdays with Dorie recipe comes from Baking with Dorie. Morning Bundt Cake sounded wonderful until I realised that 1. I don’t own a full-sized bundt pan and 2. I have given away my mini bundt pans (in a fit of equipment organisation, where I was ruthless about what I actually use most). Also, on Sunday, I ran a half-marathon (10 minute course PB!) and when I remembered that it was a TWD week – late on the same day – it was all I could do to drag myself to the basement to get my muffin tins – so, morning muffins it was!

This would also work well as a loaf, I think – a slice with butter would be an excellent autumnal breakfast! But these muffins hit the spot the day after my race when, curiously, I was hungrier than I was right after I ran. I thought I might be sick of carbs after a 3 day carb load but these were the exception 😉

This recipe contains all sorts of “morning” ingredients – granola, yoghurt, dried fruit (and nuts if you like,  I didn’t use) and citrus along with some warming spices like cinnamon and all spice. I omitted the cardamon as it’s not my favourite flavour. I made 1/2 the recipe for 12 muffins, using a 1/4 cup cookie scoop to portion them out. I subbed in lemon zest and flesh for the orange or tangerine the recipe called for and used lemon yoghurt as that’s what I had on hand. These were light and fluffy and not too sweet (half the recipe called for 150g or 3/4 cup sugar but I used 100g or 1/2 cup and that was plenty as there is also honey in there). The perfect autumn breakfast!

  1. We loved this recipe. These muffins look so fresh and delicious for a morning breakfast, a snack, or really anytime. I made a note in my book to try them as muffins…I’m sort of thinking my book at this point is part Dorie and part everyone from this group as I note all the names of you all and your suggestions beside the recipe in the book. It’s just full of great ideas…this is definitely one of them because I can make a batch, freeze some and they can be the gift that keeps on giving, so to speak. Lovely photos.

  4. First of all, congratulations on the half marathon! I like your idea of muffins..I debated on doing the same just for ease of sharing if nothing else.
