This week’s recipe for Cook the Book Fridays comes from Dorie Greenspan’s cookbook, Everyday Dorie. Honey-Mustard Salmon Rillettes wasn’t a dish I was going to eat myself but a small portion of this was perfect for a light summer appetiser for others!
Rillettes are a common apéritif item in France – typically using meat (pork) which is slow-cooked in its own fat and then shredded and packed back in the fat to store. It’s very rich! Dorie’s version using salmon is lighter – uses smoked and poached salmon so it’s not as “spreadable” as a true confit but a bit more chunky.
Along with the poached and smoked salmon, there’s mayonnaise, butter, shallot, mustard, honey, capers, and herbs (dill and cilantro) and it comes together pretty quickly for an easy dish to serve to company. I had the wrong crackers to serve this on (using what I had in the pantry) but my taste testers gobbled this up and pronounced it excellent. I’ll take their word for it!
