This week’s recipe for Cook the Book Fridays comes from Dorie Greenspan’s cookbook, Everyday Dorie.
Salmon Brandade is a creative twist on Brandade (a mix of mashed potatoes and salted cod (even for a non-fish lover like me, it’s delish!). This recipe is actually a little bit like a salmon shepherd’s pie – with fresh and smoked salmon in the “filling” and tiny pieces of diced smoked salmon folded into the creamy mashed potatoes. So yeah. one I was definitely not going to eat – of all the fish, salmon is probably my least favourite.
I made 1/4 of the recipe expecting to end up with two smaller serves but the amount it made was easily enough for 4 serves – it’s quite rich so you don’t want a lot
Dorie says:
This brandade celebrates everything that’s warm and comforting about the original while adding a touch of luxe – it’s brandade for dinner parties. Serve with a salad and white wine. Maybe even Champagne.
Well, yeah, I don’t know about serving this at a dinner party and I’ll leave the tasting notes to Neil in the comments but I’m pretty sure this was tasty…

This was TOTALLY to my tastes: just delicious. The combo of “regular” and smoked salmon added a level of complexity, without it being too “smoked intense”, if that makes sense.
Serves with a crisp white Scheurebe from Pflaz, Germany.
You could make it for me, anytime, Mardi…

I don’t mind making the salmon brandade; it’s delicious. But serving it at a dinner party, I have my doubt!
We were not sure about this one and had never tasted a brandade 😳. We enjoyed it more than we expected too, but we like salmon. If you don’t enjoy salmon…this is not the recipe for you.
