Les Petits Chefs living their best #brunchlife with Matt Basile at Lisa Marie

It’s always a good week when “field trip to Lisa Marie” is on the agenda!

The boys have worked with Matt Basile seven times over the past few years and he’s a legend in our Petits Chefs circles! He’s known as the “deep frying guy” because he always manages to weave the deep fryer into the recipes he makes with the boys (because, well, fried food…).

Matt’s recently released his second cookbook, Brunch Life (with photography by Kyla Zanardi who shot In the French kitchen with kids) which is a treat for those who love brunch (so, that would be everyone!).

Everyone loves chicken and waffles, right? But sometimes it’s a bit of the heavy side so in Brunch Life, Matt’s created a snack-sized version – Popcorn Chicken and Waffle Bits featuring chicken (deep fried!), waffles torn into bite-sized pieces and actual popcorn, drizzled in a male syrup, buttery sriracha sauce. Aka: the boys’ idea of heaven! This field trip was a little problematic because we all arrived in different groups – my group last – but when I finally stepped into the kitchen, Matt had everyone organised – Team Waffle and Team Chicken. He really should be a teacher…

Matt is such busy guy and I never take for granted that he will be able to fit a visit from the Petits Chefs into his packed schedule especially this year as he works to promote his book! But he always takes the time to work with the boys if possible and we’re SO grateful. I know that group of boys went to sleep that night with visions of fried chicken (and maybe running a brunch restaurant) dancing in their heads. You’re our hero!
