This week’s Tuesdays with Dorie recipe from Baking Chez Moi was the perfect dessert for sharing with friends and family here in Southwest France. It’s a decadent dessert with a few different components but none of them are particularly difficult and you can make them all in advance so it’s easy to pull together what looks like a complicated dessert at the last minute even after dinner.
You start out by making a chocolate crémeux – basically a mousse-like pudding that’s soft and creamy that needs to sit in the fridge for a few hours (overnight in my case). Then you poach some cherries in wine and strain off the syrup. That can sit overnight. Next up, you make some chocolate crumbs (basically shortbready chocolatey cookie crumbs). Those can sit in an airtight container overnight too.
When you’re ready to serve the dessert you can put all the components on the table for people to self-serve or you can plate it individually – it’s very versatile. Don’t be tempted to “minify” this dish – you’ll want it all (and 6 servings was just enough for 4 in our case LOL!).
I’ll be making this one again, for sure (even outside cherry season, I’d just eat the crémeux and the crumbs on their own!).

I agree, the serving was more reasonable for 4 people and they each only got a small scoop. You also were right on with the fact it would be perfect for company…you can make it ahead of time and it quite the grand dessert!
