This week’s Tuesdays with Dorie recipe comes from Baking with Dorie. Ricotta Tomato Tart was a recipe I voted for because it’s the last tomato season we’ll be baking from this book!
This month threw a spanner in my baking works though as I’m working out of someone else’s kitchen who has generously loaned us their apartment while our house is being painted. I don’t have access to most of my kitchen equipment because it’s under drop sheets and/or inaccessible… so I riffed on this recipe a bit I think Dorie might call it “playing around” 😉
While I had most of the ingredients, I didn’t have access to my food processor or tart pans to make the pie crust, but I did find languishing in my freezer as I was cleaning it out (nothing like a whole-house painting project to inspire some purging!), some pre-baked mini tart shells so I figured, why not minify? It’s been a while since I did so…
The filling comes together quickly and is ricotta, egg, lemon zest and juice, fresh herbs (I used basil), green onions, salt and pepper and some olive oil. Because of the size of my tartlets, I used halved cherry tomatoes instead of larger ones. I halved the filling which made exactly 12 mini tarts and a couple of them are the perfect summer lunch, paired with a green salad! Plus, they are so cute, n’est-ce pas?
