
Les Petits Chefs baking club made a favourite bake last week – Blueberry Galettes!
I love galettes because they are MEANT to be rustic so there’s no worry about the pastry needing to be perfect. Weird shape? It’s meant to be like that! Hole in the pastry Patch it up – noone will notice!
I made the pastry for these at lunchtime so it could have a bit of a rest in the fridge and was ready to go for when we started the session.
While the pastry warmed up a bit we made the filling…
We rolled lemons to make them juicier and mixed lemon juice with blueberries. cornstarch and sugar…


By this time, the pastry was more work-able so we got rolling…

Each child got a piece of pastry big enough to make an individual galette which they then filled with about 1/3 cup of the blueberry mixture…

Then we got to crimping the edges and making sure none of our precious berries would escape…

Such care! We eggwashed the edges and then sprinkles a bit of raw sugar on the eggwash…

While they were baking, we made a batch of pastry by hand…

The kids were amazed to see that the finished product produced the pastry they had worked with earlier!

Galettes were packaged up and *some* of them made it home but I don’t think all of them did 😉
I made sure to include a photo on the recipe so that parents who weren’t able to taste their child’s creation… With a “serving suggestion” of course!

These look delicious, I’ve got some blueberries in my freezer, this would be perfect way to use them up!
They work with frozen blueberries too!
