Tuesdays with Dorie: Buttermilk-Molasses Quick Bread from Baking with Dorie

This week’s Tuesdays with Dorie recipe comes from Baking with Dorie. Buttermilk-Molasses Quick Bread was, indeed, fast to come together (and all in one bowl!). At the end of the first week of teaching on a weekend where I had volunteered to run the kids’ cupcake decorating stand at our annual street party, I didn’t have much energy for a big bake but this was perfect and pretty hands-off.

This is a mixture of rye and all-purpose flour, wheatgerm and wheat bran, baking soda and some spices (fennel, caraway, anise) mixed with buttermilk and molasses. To be honest I didn’t really taste the spices at all – it’s more molasses-y than anything. Recipe calls for 55-65 minutes baking at 300˚F but my loaf (full-sized) took 82 minutes for the skewer to come out clean and for the internal temperature to come to 198˚F (did you know baked goods’ internal temps are a good guide to if they are done as well as the “skewer test”? I just got this one for my dad and it’s really good and easy to use (<<< affiliate link but tried and tested and recommended!).

I shared this loaf with a few different neighbours but also enjoyed a slice later that day with whipped cream cheese and a drizzle of honey and a cup of tea on my porch on an unseasonably chilly September afternoon. It was delicious – kind of like (real) gingerbread texture. I can’t wait to eat some of this when it’s a couple of days older, toasted with butter!

  1. Oh that looks so pretty and delicious, and the cream cheese and honey sounds like a wonderful idea. I’m making a note to try that, thank you. We love this recipe, I can see making this one again.
