
This week’s recipe for Cook the Book Fridays comes from Dorie Greenspan’s cookbook, Everyday Dorie. Christiane’s Dinner Party Terrine sounds like it might involve some meat, right? But actually, this is a crustless quiche baked in a loaf tin so it slices and serves like a terrine. Dorie calls this a “dinner party” terrine as it’s sliced thin and served with a salad as an appetiser/ starter but if you serve thicker slices it can potentially be dinner or lunch on its own with extra veg and a salad.
I have to say I wasn’t overly excited by this one once I realised what it was but was pleasantly surprised with the result – a fairly low-prep dish that made a LOT (for once I didn’t minify this one!) that was very tasty. This one contains red peppers, scallions, onions, and lots of fresh herbs but honestly, you could put anything in here – I am thinking mushroom, bacon, and tomato would be great as a “breakfast” version of this dish.

This bakes in a loaf pan in a water bath so it’s a bit fussy in that sense. It also takes 90 minutes to bake so plan ahead. I didn’t think it would take that long but at the 90-minute mark it was just perfectly set (note to self: always trust Dorie!). Once it had sat in the tin for a bit out of the oven, it held up beautifully and sliced like a cake. It felt very elegant and like something you would get in a fancy French restaurant that would surprise you!

So pretty with the cross-section view of the colourful vegetables! It was light but satisfying and a perfect “make ahead” dish because it can be served room temperature or even chilled.
We served this in thick slices with salad/ vegetables and it made enough for 6 substantial meals in case you’re not planning on making this for a dinner party. A surprise hit (at least with me – I know Mr Neil was looking for the meat/ rest of the meal LOL!).
