The Twelve Days of Holiday Treats!

Once again, this year, from December 1st-12th I’ll post a new holiday treat recipe every day – inspiration for your holiday entertaining!

The recipes I’m sharing are small-er batch – each recipe makes 1-dozen or a few more smaller-sized treats that are simple to prepare and that use everyday ingredients and equipment so hopefully you’ll be able to whip up any of these on a whim. Check out the treats from 2019, 2020, 2021 and 2022 at the bottom of this post too for more inspiration!

Today’s treat is inspired by my favourite seasonal drink – hot chocolate and marshmallows (pairs well with a Hallmark Christmas movie!). I’ve made a sandwich version of this in the past where I made the marshmallow filling but this time around, I’ve simplified and used cut-up marshmallows to top these naturally gluten-free cookies. This makes them super simple and easy to whip up a batch when you have a craving for a hot chocolate in cookie form!

These were a bit of an experiment as I wasn’t sure what the marshmallows would do in the oven. They puffed up SUPER round and I was thinking that maybe I could coat them in chocolate to make Chocolate Coated Marshmallow Puff Cookie (like these) but of course, as soon as they came out of the oven, they deflated. #becausechemisty I guess.

And I was sure they would be ruined but actually, they settled down into a lovely topping that was soft and chewy and PERFECT with the slight crunch of the cookie underneath. So, a successful experiment!

Chocolate Marshmallow Cookies

Chocolate Marshmallow Cookies

Hot chocolate and marshmallows in cookie form!

Prep Time 20 minutes
Cook Time 18 minutes
Total Time 38 minutes

Ingredients

  • 50g (1/2 cup) almond flour 
  • 5g (1/4 cup) granulated sugar 
  • 2 tablespoons unsweetened cocoa powder 
  • 1 large egg white 
  • 6 large marshmallows
  • semi-sweet chocolate for chocolate shavings

Instructions

    1. Heat oven to 300˚F/ 150˚C and line a baking tray with parchment paper.
    2. Whisk the almond flour, sugar and cocoa powder together in a small bowl.
    3. Use an electric hand mixer to whisk the egg whites to soft peaks in a small metal bowl.
    4. Gently fold the dry ingredients into the egg whites using a rubber spatula and mix until just combined. The mixture will have a thick, paste-like consistency.
    5. Transfer the mixture to a pastry bag fitted with a plain piping tip (3/4 inch/ 2cm in diameter) and pipe out 12 rounds of the mixture (approx. 1 1/2 inches/4cm in diameter).
    6. Cut the marshmallows in half and place one half, cut side up, on top of each cookie, pressing it in gently.
    7. Bake for 15-18 minutes, or until the cookies are crispy around the edges and the marshmallows are puffed (don’t be disappointed, but they will completely deflate once they are removed from the oven!).
    8. Allow to cool completely before using a Microplane to shave some semi-sweet chocolate over the top of each cookie.
