Tuesdays with Dorie: Glenorchy Flapjacks from Baking with Dorie

This week’s Tuesdays with Dorie recipe is from Dorie Greenspan’s Baking with Dorie and is a fabulous recipe that got me through the last week at school before spring break (including 50-something parent teacher interviews!).

Glenorchy Flapjacks are not what some might think (pancakes), but rather, a type of granola bar/ slice containing oats, coconut, crystallized ginger, dried cranberries, salt, butter, brown sugar, golden syrup and (optionally) sesame seeds sprinkled on top.

Named for the town of Glenorchy in New Zealand, this is a recipe Dorie brought back from her travels!

I used dried apricots and cranberries for this and threw in some pumpkin seeds too (no sesame seeds as I was taking htem to work and have allergic colleagues). I also halved the recipe and used a smaller rectangular baking pan (< affiliate link) and it worked out well – making 12 generous pieces/ slices/ bars.

These came together in a flash and taste great (it’s the golden syrup, I swear! < affiliate link but if you haven’t tried it before, you need to!) and were the BEST “pick me up”/ “keep me going” snack and they are even pretty healthy. I’ll be making these again, for sure! Quick to make, great-tasting and “not terrible” for you (unless you eat the whole pan!) – what could be better?

  1. What beautiful photos you always do. I love the look of the pumpkin seeds and making a note in my book to do that, too, next time. This was my first experience with Lyle’s Golden Syrup and you are right, it has its own flavor and is so lovely in this recipe. Such a nice post.

  3. Golden Syrup ain’t what it used to be…. you’d buy it in a tin (now, down under, you get it in a plastic bottle squeeze pack) and it was so syrupy that you could stand a spoon up in it…. The slices look nice.
