This week’s recipe for Cook the Book Fridays comes from Dorie Greenspan’s latest cookbook, Everyday Dorie and is actually a combination of two recipes – Dorie’s “Demi-Goddess” dressing and a cold vegetable soup (or “sipper” or “shot” which I think are more appropriate than “soup” for this recipe).
So yeah before you make the soup, you make a dressing – a “Demi” Green Goddess dressing because it’s made with buttermilk and yoghurt instead of mayonnaise so it’s lighter. Other ingredients include: white balsamic vinegar, lemon juice, avocado, cucumber, garlic. mixed herbs and scallions. Dorie suggests that you can use it as a dressing on vegetables, on steamed fish, chicken, burgers (pretty much anywhere, seems very versatile!) or just as a dip with crudités.
The dressing is, indeed, delicious on its own but the soup doubles up on some of the ingredients and adds zucchini (and a little more liquid so it’s not so thick). I made a tiny portion of this to add to my lunch on a warm day and it was really lovely (I used lots of mint which I think is key, especially in hot weather). Would I make this again? Maybe if I had leftover Green Goddess Dressing. What a perfect use of leftovers combined with ingredients you probably have on hand in the hot weather!
