This week’s Tuesdays with Dorie recipe from Dorie’s Cookies might just be the recipe to change my mind about pecan pie. I am not a huge pecan pie fan (just not in my upbringing – was always something “Americans” ate in books I read) but this iteration, I could get behind…
No matter the season, no matter the reason, if I ask Michael, my husband, what he wants me to bake, his answer is dependably chocolate-pecan pie. So it was no surprise that when I began working on this book, he said, “There goes pecan pie!” Not so fast. What about Chocolate–Pecan Pie Cookie Bars? Well, what about them? They’re great. They’ve got everything that we love about pecan pie, plus chocolate, and a sweet shortbread crust, plus the fun of being able to eat them out of hand. The topping for these bars is my favorite pecan pie filling with a couple of spoonfuls of dark rum, which is the best flavor picker-upper for brown sugar and butter and a good match with chocolate.
I mean, I’ve never heard of chocolate pecan pie but it makes me think that I might have liked it a lot more had that been the version I originally tasted!
These come together really easily – it’s Dorie’s sweet pie dough partially baked then topped with the pecan pie topping plus some chocolate (I omitted the rum this time…). Because I was baking a LOT of cookies this past weekend, I didn’t make the full-sized recipe – I used my small loaf tin to bake up half the recipe and it was perfect (made 8 bars).
This would be easy to make in large quantities and it’s a perfect recipe for all those upcoming holiday gatherings where you might want pecan pie but don’t want to bother fussing with pie crust. I’ll be remembering this for things like potlucks and cookie exchanges!
