No matter the season, no matter the reason, if I ask Michael, my husband, what he wants me to bake, his answer is dependably chocolate-pecan pie. So it was no surprise that when I began working on this book, he said, “There goes pecan pie!”  Not so fast. What about Chocolate–Pecan Pie Cookie Bars? Well, what about them? They’re great. They’ve got everything that we love about pecan pie, plus chocolate, and a sweet shortbread crust, plus the fun of being able to eat them out of hand. The topping for these bars is my favorite pecan pie filling with a couple of spoonfuls of dark rum, which is the best flavor picker-upper for brown sugar and butter and a good match with chocolate.

I mean, I’ve never heard of chocolate pecan pie but it makes me think that I might have liked it a lot more had that been the version I originally tasted!

Dorie Greenspan Chocolate-Pecan Pie Cookie Bars from Dorie's Cookies on eatlivetravelwrite.comThese come together really easily – it’s Dorie’s sweet pie dough partially baked then topped with the pecan pie topping plus some chocolate (I omitted the rum this time…). Because I was baking a LOT of cookies this past weekend, I didn’t make the full-sized recipe – I used my small loaf tin to bake up half the recipe and it was perfect (made 8 bars).

I’ll be remembering this for things like potlucks and cookie exchanges!

  1. Funnily enough, I’m also with Mardi on the American Pecan Pie position. Too many pecans, not enough pie. Same reason Canadian butter tarts are best with raisins as opposed to nuts – IMHO. (Okay I know those are fighting words for some…)

    Now with THESE bars, the chocolately goodness just brought it all together nicely. Perfect with my morning coffee. 🙂

  2. LOL – my mum got a recipe for pecan pie from a friend and was an early adopter, so we had pecan pie often. Being super sweet, I loved it! Your pecan pie bars turned out great.

  3. Hey–what’s wrong with things “Americans” eat? Haha. I, myself, have never liked pecan pie that has too much of the corn syrup goop…toothache! I also did just a loaf pan’s worth of these bars, but they were just perfect.
