
This week’s Tuesdays with Dorie recipe comes from Dorie’s latest book, Dorie’s Anytime Cakes! Mix-It-Up Citrus Loaf Cake was the perfect cake for me to make this past weekend – using up some clementines and a lemon that were on their last legs!
This is a simple cake but one with such a depth of flavour it tastes like you spent ages working on it – best kitchen ROI! Dorie suggests you can use any type of citrus – I had lemons and clementines only so that’s what I used. A combo of zest, around 3 tablespoons total – plus the juice (about 1/3 cup) made for a very citrusy cake! This is a cake made with olive oil so it’s very moist with a lovely fluffy crumb. The recipe says the glaze is optional but I don’t think it is – a little marmalade or apricot jam mixed with some boiling water to loosen it and brushed on top makes a beautiful presentation (but doesn’t last so if you are serving this at a gathering, glaze it just before serving for wow factor!).

Dorie suggests waiting a day before eating this but we didn’t 😉 What a lovely loaf! I am happy there is most of it left to enjoy through the week!

This is like the chicken noodle soup of cake loafs: just wonderfully comforting.
Perfect with a cup of tea whilst nursing a cough.

Oh wow that is a gorgeous cake !! I “glopped on” the rinds the rinds that were in my marmalade so it looked like a science project at the end, but tasted great. Hubby loved it and frankly I thought it delivered a lot of taste for the effort it took.

It’s such a versatile cake because the recipe calls for any kind or combination of citrus. Delicious!
