The Twelve Days of Holiday Treats!
Once again, this year, from December 1st-12th I’ll post a new holiday treat recipe every day – inspiration for your holiday entertaining!
The recipes I’m sharing are small-er batch – each recipe makes 1-dozen or a few more smaller-sized treats that are simple to prepare and that use everyday ingredients and equipment so hopefully you’ll be able to whip up any of these on a whim. Check out the treats from 2019, 2020, 2021 and 2022 at the bottom of this post too for more inspiration!
Today’s treat is a riff on Jam Drops (aka thumbprints) using lemon curd that I had in the fridge needing to be used up. Now these would have been lovely as they were, just plain with lemon curd but then I had the inspiration to use up some marshmallows (also languishing in the pantry) and top the cookies with a roasted marshmallow or a “lemon meringue” effect!
These worked out really well and are lovely because they are not too sweet – the cookies aren’t sweet to start with, the curd is tart and the marshmallows have that “roasted” flavour so the sweetness is dissipated. Best of all? they are SO easy to make and no blowtorch is required for the marshmallows!
Lemon Meringue Thumbprint Cookies
Easy lemon meringue cookies!
Ingredients
- 57g (1/2 stick/ 4 tablespoons) salted butter, room temperature
- 50g (1/4 cup) granulated sugar
- 1/2 teaspoon pure vanilla extract
- 1 large egg yolk
- 112g (3/4 cup) all purpose flour
- 1 tablespoon milk
- Approx. 1/4 – 1/3 cup lemon curd
- 4 large marshmallows
Instructions
Make the cookies:
- Preheat the oven to 350˚F. Line a baking tray with parchment paper.
- Beat the butter using electric hand beaters on high speed until it's light and fluffy, approximately 2-3 minutes.
- Add the sugar and continue to beat on high speed until the mixture is creamy and pale.
- Add the vanilla and egg yolk and mix on low speed until just combined.
- Add the flour and continue to mix on low speed until the flour is just mixed in.
- Add the milk and mix until the dough is smooth.
- Divide the dough into 12 equal portions and roll each portion into a round ball.
- Place each ball on the baking tray and use your thumb to make a small indentation in the top of each cookie.
- Place about 1-1 1/2 teaspoons of lemon curd in the indentation of each cookie. It should be full but not overflowing.
- Bake for 15-17 minutes until the cookies are lightly golden and the curd is bubbling.
- When the cookies are baked, remove them from the oven and place the tray on a wire cooling rack while you prepare the marshmallows.
Prepare the marshmallows and assemble:
- Pre-heat the broiler to medium-high (I set my temperature to 400˚F here).
- Line a small baking tray with parchment paper.
- Use kitchen scissors to cut each marshmallow in 3, horizontally.
- Place the marshmallow slices on the baking tray.
- Place the tray under the broiler and keep a close eye as you broil the marshmallows to a golden colour. They will puff up slightly but they will deflate once you remove them from the oven.
- When they are the colour you want, remove the tray immediately from the oven.
- Use an offset spatula to carefully remove the marshmallow slices from the parchment and gently place them on the lemon curd.
- Allow to cool before serving.
