
This week’s Tuesdays with Dorie recipe comes from Baking with Dorie. Banana Breakfast Squares was a recipe I nominated to make this month because I think a good breakfast square is always welcome at the start of a new school year.
These were SO good that:
- I didn’t get any photos except for the one at the top of this post and
- I wish I had made a full batch instead of a half (although I got 16 squares out of this in a 9-inch brownie pan so the full recipe must have made enormous bars!)
I really enjoy a good banana bread and more when it’s a “hearty” version like this one with oats, dried fruit, flax seeds, and nuts. This one includes both butter and oil as well as buttermilk or sour cream so it’s very moist (even a few days later) and because my bananas were SUPER RIPE (they had been frozen which I find intensifies the sweetness), I cut down on the sugar, using just 1/4 cup (50g) for half the recipe and it was perfect.
This “bar” (square?) eats like a cake and packs well for lunchboxes. It’s the PERFECT September/ back-to-school breakfast or snack. I gave some of these to neighbours, some went to a friend recovering in hospital and the rest went to Neil’s lunchboxes last week. I only had 2 and wish I’d made more. Soon, as I spy another bunch of bananas on their last legs on my kitchen counter!

Good nomination for the group to make the breakfast bars in September. I love the sturdy and hearty nature of them.
