
This week’s recipe for Cook the Book Fridays comes from Dorie Greenspan’s cookbook, Everyday Dorie. Hot or Cold Beet-Fennel Soup was not on my list of “must-make immediately” from this book but hey, ho, here we are, cooking our way through each recipe so I figured I’d use some pretty beets and fennel from our organic produce box that we get delivered weekly (ok, I admit to switching a few things around so that those items WOULD appear last week!).
Ok, so beets…. even though they were an “it ingredient” a while back (roasted beet and goat cheese salad anyone?), I do not like them at all… sssh!!! I think they taste like dirt (sssh x 2!!!). They also make a huge mess in your kitchen (and on your hands!)
So, yeah, I made this somewhat unwillingly, knowing *I* probably wouldn’t eat it (or much of it) and also that it would not be a hit with Neil… And I didn’t have my creative ht on this wek for a pretty photo (that’s why I shared Dorie’s version above. Mine was, well, you got what you got here:

Looks pretty? Sure. Tasted vaguely like dirt? Yes. Could not detect the fennel in there (1 bulb compared to 5 beets meant the taste paled in comparison). Would be pretty as shots at a party, for sure! Will probably not make this again just for us….

Wow… I can see you didn’t like it. Perhaps it’s an acquired taste.
We even like roasted beets and this one was not a winner with us either…
Dirt is not good eats, LOL. I hope the next one is better for you.
