About this recipe

This recipe was inspired by: 1. A busy week coming up and the need for easy to grab and go snacks, 2. The ingredients in my pantry (SO many sunflower seeds for some reason!) and 3. Always thinking of ways to incorporate my Endurance Tap that isn’t just drinking it!

This recipe comes together quickly, only uses a few ingredients and tastes great. Not too sweet, just that little hit of energy you need mid-morning/ afternoon or pre/ during your workout!

Yield: 20-24

No-bake cranberry sunflower coconut bites

Easy no-bake sunflower cranberry coconut energy bites.

Prep Time 15 minutes
Chill Time 30 minutes
Total Time 45 minutes

Ingredients

  • 25g (1/4 cup) slivered or sliced blanched almonds
  • 50g (1/3 cup) dried cranberries
  • 50g (1/2 cup) unsweetened coconut
  • 80g (2/3 cup) raw sunflower seeds
  • 2 tablespoons maple syrup or 1 x 38g pouch of Endurance Tap

Instructions

  1. Place almonds and cranberries in the bowl of a food processor and process until the nuts are roughly chopped (approx. 20 seconds).
  2. Add the coconut and sunflower seeds and process a further 30-45 seconds until the mixture starts to resemble a paste. You may have to scrape down the bowl of the food processor with a rubber spatula from time to time.
  3. Add the maple syrup or Endurance Tap and process until the liquid is thoroughly incorporated (approx. 20-30 seconds).
  4. Continue to pulse until the mixture starts to clump up against the side of the bowl. Again, you might need to use a rubber spatula to scrape the sides to make sure everything is being processed evenly.
  5. Use a 1 tablespoon cookie scoop to scoop out the mixture into 20-24 balls.
    Roll each ball in coconut then bring them together in your hands,
  6. Wet your fingers if you need to then press the mixture into a 24 cavity mini muffin tin* until they flatten slightly. They will look like unbaked cookies.
  7. Chill the tray for 30 minutes then transfer the energy bites to an airtight container and store in the fridge for up to a week (if they last that long!).

Notes

* You can also press thi mixture into an 8 x 5-inch loaf tin lined with plastic wrap, chill as per the instructions and then remove the slab from the pan and the plastic and cut into small squares.

I made these a few times, experimenting with the amount of cranberries and Tap/ maple syrup and it took a bit to get them right – too many cranberries and it’s just a sugar bomb (not the goal!). I also used a few different types of sunflower seeds – the raw ones work best but I also liked these made with roasted and lightly salted sunflower seeds for a bit more of a savoury flavour.

Truly one bowl!

The beauty about these is that they really are one bowl – just place your mini food processor on your scale (<< both affiliate links but both products I use in my kitchen daily!) and off you go!

  1. For those of us unfamiliar with Endurance Tap … is it a drink with the consistency of water or is it truly like a gel and has to be squeezed out of the pack?
