While I love to bake and find baking very relaxing and rewarding, I’m also on a bit of a no-bake snack kick these days. I’ve discovered no-bake energy bites (I know, I’m late to the party!) and am excited for all the possibilities they offer So many different combinations of ingredients are possible and they are just so easy to whip up.
Yesterday I taught cooking and baking all day (yep, on a Sunday, check out what I’ve got coming up here) and even though I was dead tired when I got home, I still had enough energy to whip a batch of these together for the week ahead. Honestly they take 5 minutes! You can prep a large batch of them on the weekend – they keep well in the fridge through the week. Excellent for breakfast on the go, a pre or post-workout snack or just an afternoon pick me up. I’ve made these three weeks in a row and taken them to school and my colleagues devour them! I’m a bit loathe to share the “recipe” since it’s really so easy!
I’ve made these with Endurance Tap but you can make them with plain maple syrup too. You can naturally use any nut butter you choose – I love sunflower butter at the moment. I’ve included both large flake and quick oats in the recipe since I’ve used both. I like the smaller flake quick oats because they stick together a little easier but my colleagues prefer the large flake oats because “they look like cookies” and “you can visibly identify all the ingredients”. So, it’s really up to you what you choose!
If you’re making these, a cookie scoop and a mini muffin tin come in handy, just saying – it’s much less messier than if you try to to roll them.
No bake oatmeal chocolate chip energy bites
Easy no-bake energy bites. Tastes just like cookies, great for breakfast or snacks on the go!
- 1 cup large flake (120g) or instant oats (85g)
- 2 tablespoons mixed seeds
- 150g (1/2 cup) sunflower butter
- 1/4 cup maple syrup or 2x 38g pouches of Endurance Tap
- 60g (1/3 cup) mini chocolate chips (don't be tempted to use regular sized ones here, they are too big)
- Mix all ingredients together in a medium sized bowl. Use a rubber spatula to push the ingredients together until fully combined.
- Use a 1 tablespoon cookie scoop to scoop out the mixture into a mini muffin tin.
- Wet your fingers and press the mixture into the muffin tins until they flatten slightly. They will look like unbaked cookies.
- Chill the tray for 30 minutes then transfer the energy bites to an airtight container and store in the fridge for up to a week (if they last that long!)

I live in Spain, things like Sunflower Butter are impossible to get, what can we use instead? coconut oil? Butter? Lard?
It’s not a fat you are replacing here so butter, lard or coconut oil just will not work. Looks like you can get nut butters on Amazon.es (I checked!)
