This term with the Petits Chefs, as well as working with guest chefs, the boys get to work… with me! I love these weeks because it gives me a chance to really work with the boys closely and teach them some of my favourite recipes. This week I decided to show them one of my favourite recent Jamie Oliver recipes – a twist on carbonara pasta with a different way to make pesto – both very useful techniques!
As the boys will tell you, any good dish starts with bacon…
Some toasted pumpkin seeds (we can’t use almonds)
And, because I couldn’t find fresh basil anywhere at the last minute, we used some fabulous dried leaves (so fragrant)
We blitzed this up with some lemon juice to make a beautifully fresh pesto…
The peas were added to this and pulsed a few times (not to a purée, it still has For the “cream” sauce, we used Greek yoghurt and an egg…
And tossed the pasta with a little bit of the pesto and the “cream”…

And topped our plates with more pesto and a few bacon bits…
Voilà!

A healthy, colourful dish, from scratch in just under an hour – lots of great techniques learned and lots of happy tummies. I’d say that was a win!

This is another one of those dishes where the photographs enable you to imagine the cooking smells. Loved it.
