Breakfast biscotti for Cookies and Kindness

Some of you may remember that last month, I introduced you to Dorie Greenspan’s latest project, #cookiesandkindness.

The aim: To make the world sweeter.
The method:  Bake/Share/Post

For this month’s instalment, Dorie says: “October is all about being kind – and sweet – to colleagues.” I’d argue that I’m really very sweet to my colleagues who are on the receiving end of my baking experiments nearly weekly (and sometimes more often) but when Dorie encourages you to bake you can’t really say no!

The recipe for this month from Dorie’s Cookies is Breakfast Biscotti – a “bang-for-your-buck cookie: One batch gives you plenty of cookies to share” according to Dorie. I’m not a huge fan of a lot of biscotti because they are often so hard (it’s ok because they are meant to be dipped in a coffee but still…) so I went into this thinking it would be a hit with my staff room but perhaps not me.  I was wrong! This biscotti is as little different due to the addition of granola – it makes for a different texture, more cookie than actual biscotti but even more delicious!

I’ve made biscotti a few times before and remember them as being a bit tricky to get right. You bake the dough in a log until it’s just about cooked through then you slice it and bake again, turning once to make sure it’s baked on all sides. This dough sliced fairly easily mid-bake…

Once they were all baked up they were beautiful and golden…

I used a coconut and almond granola and added some dried apricots as the fruit (Dorie uses cranberries) and it was a great combination. Half the batch went to Neil’s work and the other half to mine. In just over one hour (so, before 9.30) my bowl was empty:

The next day, because I happened to have spare macarons hanging around the house (as one does…), I was EXTRA kind and brought those for my colleagues to share as well!
