
This week’s Tuesdays with Dorie recipe comes from Baking with Dorie. Coconut-Milk-Chocolate Marble Cake is one of our last cakes left to bake in this book (we’re done in October!!!) and to be honest, i hadn’t noticed this particular recipe until it was chosen!
I’ve not had much success making pretty marble cakes in the past so I made sure to take my time to distribute the two batters (milk chocolate mixed into one, coconut in the other) in the tin, very pleased with myself until I re-read the recipe when the cake was in the oven and realised that I mixed the coconut into the entire batter *insert face palm emoji*
Anyway… Using a cookie scoop here was the way to go in order to distribute the batter evenly in the pan. I swirled them together a bit with a toothpick to produce a satisfying swirl!

I was so happy with how this cake turned out, despite the slight mistake (and I used gluten-free flour with no noticeable difference to the texture)
And look – pretty marbling!

I enjoyed this cake and so did everyone who ate it – it’s not too sweet and the texture was perfect. The coconut milk makes it an excellent choice for those who can’t eat dairy (using a butter substitute) and I liked the extra flavour it imparts. I do think I’d like to make this with a semi-sweet chocolate as opposed to milk chocolate s I found the chocolatey factor to be a bit mild. But, a winner overall!
