
This week’s Tuesdays with Dorie recipe comes from Baking with Dorie. Clam Chowder Pie wasn’t one I was looking forward to making (I do not like clams) but since I am working through the book, I figured I would have a go at this one.
Basically it’s a clam chowder in a pie crust with Oyster Crackers on top instead of a crust. Cute idea, huh? Clams, bacon, vegetables and herbs in a creamy custard not unlike a quiche in a pastry crust. Bake it a little bit and then top with oyster crackers to finish. I will fully admit that I used a store bought pie crust (9 inches as per the recipe) but because it was not a “deep dish” (note to self: “deep dish” store-bought = my regular depth pie crust) and that was a mistake.
The amount of filling made enough to fill TWO of these (I know, I didn’t minify just because of the size of tin of clams) which I duly baked up but per my clam-eater, this was not enough filling to crust ratio (which I could tell). We also couldn’t find oyster crackers so I used Ritz, thinking they are buttery and would work. Again, nope. Apparently it tasted ok but the ratio threw things too much. The lesson here? Don’t take shortcuts (or minify, I guess so the ratios are not affected!).
With that, I think we’re finished all the savoury bakes in this book – with just 15 recipes to go!!!
