Last week the Petits Chefs baking club made cupcakes! But not any ordinary cupcakes – strawberry yoghurt cupcakes with a strawberry cream cheese frosting! This was a recipe I developed a few years ago for National Cupcake Day and as I was looking back at my NCD recipes in preparation for this year’s day (on February 24th!), I remembered what a good recipe it was!
Cupcakes might seem simple to make but a from-scratch version is great to have in your repertoire no matter how old – or young – you are!
We started by weighing our ingredients (using a scale of course. This is an affiliate link but it’s the best scale – easy to use and kids fight to use it!).
Some careful measuring happened at both the dry and wet ingredient stations…
Then we got mixing!
Wet ingredients got mixed, then wet into dry…
Beautifully mixed (this mix looks lumpy because there’s strawberry yoghurt in there!).
Then – everyone’s favourite – we got to use the cookie scoops to portion the mixture! A 3-tablespoon scoop is perfect! Again, this is an affiliate link but I cannot tell you enough about the life-changing (for me as a baker and cook, at least) properties of owning correct-sized cookie scoops!
Look at those perfect portions! Kids were amazed that the mixture “makes exactly how many it says in the recipe” (hello years of recipe development LOL!)
While the cakes baked, we mixed up some cream cheese, butter and icing sugar and then we swirled some strawberry jam into the mix at the end!

We experimented with frosting the cakes – using a knife…
And using the piping bag…
Kids did a pretty good job in such a short amount of time!
And the carefully packed precious cargo was on its way home..
Except this one which was caught being eaten before it even left the room, let alone the building!
I’d say that was a success, no? 😉
