
This week’s Tuesdays with Dorie recipe comes from Baking with Dorie. Cheddar Scallion Scones sounded like a nice, easy recipe to ease back into baking. That said, I’m not the best at making scones – especially with a recipe like this where the dough is SO wet and hard to work with. I DID (of course!) minify this recipe, making 3 small scones with 1/4 of the recipe.

This was an easy recipe to pull together, though the dough WAS super sticky meaning I worked it probably more than I should have. This resulted in flatter scones than I would have wanted but they were no less tasty

Dorie suggests that bacon bits in this scone might be a nice addition but I didn’t have any bacon so I did the next best thing – made Ibérico Chorizo sandwiches with the finished scones. It was SO GOOD- the next best thing to being in Spain! (for context, we’re actually supposed to be in Spain this week, walking from San Sebastián to Bilbao but, well, circumstances mean that trip is postponed to next year). A new Spanish food store just opened up in our neighbourhood – The Spanish Pig – so we can source products close to home that we might otherwise be enjoying on the Camino…
Would I make these scones again? Probably for a brunch, yes. Would I need to figure out how to handle very sticky dough better? Also yes!

Yes, I did handle the dough with wet hands…. Sigh!
I wish I’ve made the Ibérico Chorizo sandwiches with the finished scones. Love the combo. Too bad you can’t make it to Spain this year, but glad to see you back baking again.
What a creative combo! I had frozen half my dough and baked them this week. I brushed them with garlic butter and added some flaky sea salt when they came out of the oven. The scones are tasty on their own but even better when you add a little something extra!
