Cook the Book Fridays: Double-Stuffed Deviled Eggs with Crab from Everyday Dorie

This week’s recipe for Cook the Book Fridays comes from Dorie Greenspan’s cookbook, Everyday Dorie and is one to make for a crowd (recipe calls for a dozen eggs!) but you can minify if you like – like I did – but it’s a but fiddly. I chose to boil only two eggs which made making the filling in such a small quantity a but challenging and required a little bit of guess-work.

The filling is in fact two fillings – one a regular devilled egg filling with egg yolks, mayonnaise, mustard and a little piment d’espelette. Ok, easy.

Next, Dorie has you making a SECOND filling with crab meat, diced apple, scallion and lemon juice. The recipe calls for 1/2 an apple for 12 eggs and I didn’t have a bite of an apple available to add to my 1/6 of the recipe amount of filling so I left it out. To be honest, I think it sounds like a LOT of ingredients to chop small (to fit in the egg!). This worked fine with all the other ingredients but I don’t know it was my favourite. Would the apple have made the difference? I don’t think so. I LOVE devilled eggs (and rarely make them so this was a nice treat) but I think I just prefer the regular ones!

(and yeah, I probably went a little overboard with the devilled egg topping on the crab but as I said it was hard to truly minify everything to 1/6 of the recipe!). All good, tasted great 🙂

  1. Oh your photo is so beautiful. They look so perfect. I left off the sprinkle on top but that red is just so pretty, next time, I’m doing that for sure. These were great…we loved them and I will make these again. Love your post.

  2. I did half the recipe and that was tough…two 😳😂. I agree, there was quite a bit of extra work for basically a deviled egg. They were good, but the crab didn’t come through as much as I wanted.
