Kid-made fresh rolls with mango with Vanessa Yeung on eatlivetravelwrite.comVoici the cold rolls that my Petits Chefs proudly made (and eagerly devoured!) this week. Are they perfect? No. Were they made with pride? Yes.

I always look forward to hosting the guest chefs in the Petits Chefs programme especially Vanessa Yeung. This part of the Petits Chefs programme is such a huge part of its success –  guest chefs, cookbook authors, food enthusiasts who share their time and expertise with the club by working with the boys at school or in their kitchens. Since I launched this piece of the program in the spring of 2011, the boys have worked with SO many amazing people in the Toronto food community and every week I am so grateful for their generosity.

Vanessa is a bit of a legend though because she this week was back to work with the boys this week for her FIFTEENTH visit! Vanessa’s known for her amazing dumplings and each time she comes to work with us, we generally make some form of dumpling or potsticker. This week was no exception as we made the famous Ginger Chicken Potstickers but since we had a smaller group of boys, I added in some Thai Vegetable Cold Rolls with Mango and Avocado as a second recipe – and one that practices knife skills and patience (both great things to work on for the boys!).

The cold rolls station was a hive of activity as the boys sliced the vegetables and mango into precise sized pieces, picked over herbs and shredded lettuce…

They nailed the knife skills too!

The rice paper wrappers are pretty challenging to work with and you need to work quickly but also carefully. In any case, it didn’t matter what they look like in the end, the boys ate them all!

What I loved seeing was as the dumpling group and the cold roll group changed places halfway through the class, the boys took it on themselves to teach each other (there’s no better way to solidify your own knowledge than to teach someone else!).

What a great session to end the term (the boys were already asking to sign up again for next term!) – and a great way to keep things focussed to the last minute!

    Vanessa is clearly a generous person. You and the LPCs have been very lucky with the response of people like Vanessa. Good on her.
