This week’s recipe for Cook the Book Fridays comes from Dorie Greenspan’s latest cookbook, Everyday Dorie and it’s a brilliant one for the lazy days of summer when you don’t particularly want to cook but want to eat something more than a salad.
Fair warning – it does have a lot of components: the shrimp, an avocado mash, a pico de gallo-type affiar (with peaches and pineapple – love the sweet and savoury combo in this dish!) and a spicy mayonnaise/ dressing. There are also a fair number of ingredients (spices etc…) so it might look daunting to start with. Many of Dorie’s recipes in this book are pretty simple and short so this one surprised me a bit at first glance.
Never fear, because it’s Dorie, the components are actually super simple and everything except the shrimp can actually be prepared in advance so it’s a perfect meal for summer entertaining. There are SO many flavours going on and you wonder if it’s maybe going to be too much but somehow (because it’s Dorie!) they all manage to work in harmony!
I served this in bowls at the table and we assembled the tacos ourselves. A great recipe to batch up for a crowd, serving it like this means that everyone can please themselves.
I’ll definitely be making this on again – or at least variations on it – such a satisfying summer meal that doesn’t require too long in the kitchen at all!

You are right…sooo many flavors but so much harmony between them all!! This was so delicious and will for sure be made again!
A complete surprise. While we were chopping and mixing we thought it just would not work. Too much lime, however, as we always said, trust Dorie, cause it was fantastic.
What a revelation lol ! We LOVED this recipe and like you, plan to make it again. I could not get my head around how these flavors were going to combine but the moment I tasted the results I simply knew it was a winner. Thank goodness for Dorie 🙂
