The Twelve Days of Cookies!
From December 1-12th I’ll post a new cookie (or holiday treat) recipe every day – inspiration for your holiday entertaining or cookie exchanges!
The recipes I’m sharing are small batch (each recipe makes 1-dozen) that are simple to prepare and that use everyday ingredients and equipment (hint, a small loaf tin and electric hand beaters are your friends for so many of these recipes!) so hopefully you’ll be able to whip up any of these on a whim.
Ok so these are not technically a festive sweet, but they are the stuff of Australian childhood birthday parties and are so much fun to make and eat that I couldn’t NOT include them in this lineup! Honey Joys only contain a few (sweet) ingredients and are perfect as is, although you could totally fancy them up by adding dried fruits and nuts to the mix for a pop of colour!
Honey Joys
Easy Honey Joys - the stuff of Australian childhod birthday parties!
Ingredients
- 113g (1 stick/ 8 tablespoons) salted butter
- 50g (1/4 cup) granulated sugar
- 4 tablespoons runny honey
- 4 cups cornflakes cereal
Instructions
- Preheat the oven to 300˚F. Place 12 cupcake liners in a muffin tin.
- Melt the butter, sugar and honey over medium heat in a small pot.
- Once the butter is melted and bubbling, pour over the cornflakes and use a rubber spatula to mix well to combine. Make sure all the dry cereal is well-coated.
- Use a 3-tablespoon cookie scoop to fill the cupcake liners with the mixture.
- Bake for 10 minutes then remove from the oven and allow to cool in the muffin tin for around 10 minutes.
- Remove the Honey Joys from the muffin tins and place on a wire cooling rack to come to room temperature.
Notes
These are wonderful as they are but you could definitely add in some dried fruit and nut/ coconut if you like!

For the holidays, you could add some pistachios/ pumpkin seeds and dried cranberries or even glacé cherries to make them festive. A little coconut is nice too!
