Les Petits Chefs make chocolate-filled shortbread cups

Before we begin today’s post, did you know that May is Brain Tumour Awareness Month in Canada? Did you also know that 27 Canadians hear the words “you have a brain tumour” EVERY DAY?

Many of you know that I was diagnosed with a meningioma in May of 2023 and underwent emergency surgery to remove it (less than 48 hours after it was found). As part of my goal to raise awareness and, ultimately, funding to help BTFC support research projects, offer support, deliver trusted information and resources, and drive national advocacy efforts, I am donating $2 for every copy of my self-published mini cookbooks, French Food for Everyone sold during the month of May to the Brain Tumour Foundation of Canada.

In our most recent baking session, Les Petits Chefs baking club made a favourite easy recipe of mine – little shortbread cups filled with chocolate!

These come together pretty quickly and don’t use many ingredients so they are a perfect recipe to make when you have a cookie craving but don’t want to have to make a grocery run.

We creamed some butter and icing sugar…

Carefully measured out our dry ingredients… and added them to the mix…

Then we found ourselves with two recipes’ worth of dough – how to divide these so each recipe made *exactly* 12?

We divided one portion using some good old math and geometry….

And the other using a scale…

Once again, I used cupcake liners in our muffin tins to remove the one step of greasing the tins (highly recommended when you are short on time…)

We used (lots of) little fingers to press the centres of these down to form little cups before they baked…

And used a tablespoon measure to re-imprint them once they had baked.

Why the need to make sure they were deep?

Why to make room for…

CHOCOLATE!

Perfectly imperfect!
