Matt Basile has been one of our most popular Petits Chefs guests over the past five years since the first time he welcomed the boys into Lisa Marie and became known as “the deep fried pizza guy” 😉
So when Matt recently announced that after six very successful years, Lisa Marie would be closing so they could focus on other projects, I wondered if we would ever cook with him again? Fortunately, Matt is up for an adventure and, just a couple of weeks after the doors of Lisa Marie closed for good, Matt showed up at the school and rolled up his sleeves to cook with the guys in the STEM lab! For me, there was only one recipe in the running on the “to make” list – the famous S’MORES PANCAKES!
Pancakes are actually a great recipe for kids to know how to make (especially jazzed up with s’mores ingredients!) – it’s a life skill-type recipe, right? And even though everyone has their own recipe and method for pancakes, I felt the boys needed to be introduced to THIS recipe. It’s SO good. So, a great, must-know recipe? Check. Bonus? There’s a bit of measuring involved so it keeps kids busy…
There’s also some careful mixing involved…. Whisking the butter into the wet ingredients…
And adding the wet ingredients to the dry…
I loved how Matt talked the boys through the ingredients and the importance of adding them in a certain order because of how they interact with each other (always good to have a bonus science lesson in cooking club!). He also taught them how they could make the recipe the day before but just add the active ingredients (baking soda and powder) before they start cooking them – this is a great tip that I’ll definitely use.
Yup – we went there. Mini Eggs in the batter!

The boys did a great job with Matt’s guidance of making mini versions of the pancakes. There were, literally, pancakes for days!
Matt got them organised to assemble the s’more’s aspect of the dish… Spreading marshmallow fluff between the layers…

I was so thrilled Matt was available to come and work with the boys even though he’s kitchen-less right now. It’s a sign of a great chef when they can come in and adapt to any type of space and make magic. Matt in the STEM lab on Monday definitely made magic. And made a lot of little boys happy (and hopefully their parents when they recreate this dish at home!).
