This weeks’ French Fridays with Dorie “recipe” (Anne Le Blanc´s Pistachio Avocado, p 106) is really not so much a recipe but an idea. And one that opened my mind and tastebuds to the deliciousness that is pistachio oil!
Basically, it’s avocados halved, spritzed with a little lemon juice to keep them from browning, then you fill in the centre with avocado oil and sprinkle with a little sea salt. That’s it, that’s all. Because we had avocados which were a little on the young side (they were a day off being really ripe), the cubes (Yeah I went rouge a little – thought it was more convivial to serve like this instead of individual halves of avocado) did not need the lemon juice to keep them green but they did well with a little lemon zest sprinkled over the top. I let the “salad” sit in the oil for about 15 minutes before we served this and it was pretty tasty.
The next day I used one leftover avocado (it was much riper!) and I sliced it thinly and served it drizzled with the pistachio oil. And, ahem, I ate it all (it was only tiny) as I stood at the kitchen counter and watched the rain come down and wondered where the summer was…
I’m pleased I have a lot of the pistachio oil leftover (I used President’s Choice Black Label) as I’ll definitely be using this to finish dishes and salads this summer!
