The Twelve Days of Holiday Treats!
Once again, this year, from December 1st-12th I’ll post a new holiday treat recipe every day – inspiration for your holiday entertaining!
The recipes I’m sharing are small-er batch (as many of us will still be attending/ hosting smaller gatherings) – each recipe makes 1-dozen or a few more smaller-sized treats that are simple to prepare and that use everyday ingredients and equipment so hopefully you’ll be able to whip up any of these on a whim. Check out the treats from 2019, 2020 and 2021 at the bottom of this post too for more inspiration!
Today’s recipe is a throwback to a chocolate bar that I loved as a child in Australia – Golden Rough is roasted coconut mixed into milk chocolate and it’s deliciously more-ish. I don’t know what got me thinking about this recently but I figured these must be quite easy to make.
In researching them, though, I noticed that some of the Australian DIY recipes used Copha, an Australian staple – it’s vegetable shortening made with coconut oil and is a key ingredient for an Aussie children’s party treat, Chocolate Crackles. Using a product like this means they can be enjoyed straight out of the fridge if you store them there because the chocolate doesn’t set too hard.
I don’t remember the packaging of Copha stating it was made with coconut oil when I was growing up but it makes sense they’d share that now coconut oil is a somewhat trendy ingredient. At the end of the day, it’s not a particularly healthy ingredient which is why it’s perfect for a small batch of a treat to enjoy through the holiday season 😉 (we’re using 2 tablespoons here, 30g for 12 portions).
I’m using straight coconut oil here and it works perfectly. These come together in no time and are dangerously more-ish – don’t say I didn’t warn you!
Coconut Roughs
Chocolate and coconut - a match made in heaven!
Ingredients
- 100g unsweetened coconut (approx. 1 cup)
- 50g milk chocolate (approx. 1/4 cup chips)
- 50g semi sweet chocolate (approx 1/4 cup chips)
- 30g (2 tablespoons) coconut oil
Instructions
- Line a mini-muffin tin with paper liners and place the coconut in a medium-sized bowl.
- Melt chocolates and coconut oil in a metal or ceramic bowl set over a pot of simmering water (or in a microwave at 50-60% power in bursts of 30 seconds until it's just about melted and then stir to melt the remainder).
- Pour the melted chocolate over the coconut and use a rubber spatula to mix it into the coconut. it will feel like there's not enough of the chocolate but there is - keep on going!
- Use a 1-tablespoon cookie scoop to portion the mixture into the lined muffin tin. Press the mixture down in the liners slightly.
- Place the tray in the fridge for 1 hour.
Notes
Keep these in an airtight container in the fridge. You can enjoy them straight out of the fridge, thanks to the coconut oil which means the chocolate won't set too hard.
