Umami Burgers came to be from some serendipitous ingredients coming together in Dorie’s fridge: oyster sauce, soy sauce, gochujang and sesame oil are mixed together then mixed into some sautéed chopped mushrooms which are then mixed into ground beef to make burger patties. I LOVE mushrooms and I LOVE all those flavours and the idea of a “umami” burger sounded wonderful to me!
So here’s the thing. I did love these flavours and I happily ate this but I think when I make it next time (because there will be a next time!), I’ll add some binder to the meat. Mixing in mushrooms to ground beef doesn’t a burger make – whilst it was flavourful (I let the mixture sit in the fridge for about 4 hours), the patties kind of fell apart a bit as you ate them. I’ll add an egg and maybe some panko breadcrumbs and I might even make more of the sauce to add to the burgers as well!
But no matter, this got me thinking and it was delicious served on a bun with a little mayo (maybe some hot sauce next time?) and some kale slaw dressed with an Asian dressing. A fabulous twist on an easy Sunday dinner!
