Comfort Food: Easy potato gratin with cheese and bacon

Cheesy potato bake on eatlivetravelwrite.comBrrr – the temperatures have certainly dropped significantly over the past few days and we’re well into “Comfort Food” weather. Perfect timing as I’ve just written about one of my favourite comforts foods over on JamieOliver.Com.

Potato gratin on eatlivetraveiwrite.comMmmm… it’s an easy potato gratin baked with cheese and bacon and topped with slivered almonds and green onions.

It’s based on some of my favourite baked potato combinations – like these twice baked potatoes (my dad’s favourite!), this slow cooker “baked potato” soup or even this chilled potato soup (file away for when it’s warmer!). I wanted to jazz up the potato gratins of old (you know, the ones made with canned cream of mushroom soup?!) and it’s easy with just a few simple additions.

Loving this! I wouldn’t have thought of adding almonds to this casserole.
