I’m absolutely thrilled to have been asked to contribute the official recipe to the Mushrooms Canada GO PINK campaign again this year.

If you’re in Canada, watch for the PINK tray packs of fresh Canadian mushroom with a PINK ribbon on the label during National Breast Cancer Awareness Month, October 2012. Mushroom growers across Canada have joined with the Breast Cancer Society of Canada to support research for the prevention, early detection and treatment of breast cancer.  For every kilogram of fresh mushrooms sold in the pink packages from September 24 to November 10, a contribution will be made to the Breast Cancer Society of Canada. Look for fresh mushrooms packed in pink trays with a pink ribbon on the top.

And what’s the connection between mushrooms and breast cancer?  Well according to research, mushrooms may have anti-tumour properties.  Mushrooms contain Conjugated Linoleic Acid which suppresses a natural substance in the body called aromatase.  By blocking aromatase, physicians can reduce the levels of circulating estrogen in post-menopausal women.  That is important because, according to the Canadian Cancer Society, high levels of estrogen are associated with a higher risk of breast cancer.  “Diet is a key consideration for disease prevention because it is something that everyone can control,” says Dr. Chen of the City of Hope Cancer Centre in Los Angeles. “Our research shows that women may benefit from a balanced diet, which includes about 3.5 ounces of mushrooms per day.”  White button, portabella, crimini and shiitake mushrooms showed significant inhibitory effects with large mushrooms having the strongest activity.

Now, about that recipe? I developed this in France over the summer, with my mum actually.     At any rate, (most) have their intentions and hearts in the right place…though there are also millions being made corporately.

  2. Your way with pastry continues to astound me – and this one is tops. Mushrooms are one of my favourite things, and I love seeing the big slices alongside the tomato. You and your mom are a culinary force to be reckoned with. 🙂
