From December 1-12th I’ll post a new cookie (or holiday treat) recipe every day – inspiration for your holiday entertaining or cookie exchanges!
The recipes I’m sharing are small batch (each recipe makes 1-dozen) that are simple to prepare and that use everyday ingredients and equipment (hint, a small loaf tin and electric hand beaters are your friends!) so hopefully you’ll be able to whip up any of these on a whim.
First up – what says “holidays” more than shortbread? There are SO many shortbread recipes out there it’s hard to choose but I like this one which uses just three ingredients and comes together in a flash – perfect for kids to prepare too!
Easy three ingredient shortbread
Easy three ingredient shortbread recipe - perfect for the holildays or anytime!
Ingredients
- 113g (1 stick/ 8 tablespoons) salted butter, room temperature
- 50g (1/4 cup) granulated sugar
- 150g (1 cup) all purpose flour
- approx 1/2 tablespoon granulated sugar, for sprinkling
Instructions
- Pre-heat oven to 300˚F.
- Prepare an 8-inch loaf tin by lining it with parchment paper, leaving some overhang on each side so the shortbread is easy to remove.
- Beat the butter on high speed until it's light and fluffy, approximately 2-3 minutes.
- Add the 1/4 cup of sugar and continue to beat on high speed until the mixture is creamy and pale.
- Add the flour a little at a time and beat on low speed until just combined.
- Press the mixture into the lined loaf tin, making sure it's evenly distributed in the tin.
- Sprinkle the remaining sugar evenly on top of the dough.
- Bake for 30 minutes.
- Allow the shortbread to cool in the tin for a few minutes before removing (using the overhanging parchment paper) and placing on a wire rack to cook completely.
- Use a sharp knife to cut the shortbread into 12 pieces. Store in an airtight container.
