It’s Fathers’ Day here in Canada today. But not in Australia. Which means that when it IS Fathers’ day in Australia (that would be September), where my Dad lives, I ALWAYS forget. So in an attempt to jump the gun and be proactive, today I am posting a dish just for my dad. My dad was definitely not the cook in our family but when I think about Dad in the kitchen, I will always think about bacon and eggs on Sunday nights. Yes, that’s right, before breakfast for dinner was trendy, we in the Michels family were trailblazing that path ourselves.

For whatever reason, I can’t remember for the life of me what everyone else ate on Sunday nights (although baked beans and/ or spaghetti on toast is ringing a bell right now) but I do remember that Dad had bacon and eggs and toast on many a Sunday evening. Today I am combining that dish with pretty much the first dish I remember making all by myself – rice and peas (no judging here, ok? We’ve got carbs and vegetables so it’s not that bad!) – to make bacon and egg fried rice. It’s the perfect dish for a Sunday night (or even Sunday morning!) and it’s easy to customise according to, well, what you have in your fridge on a Sunday night…

Bacon and egg fried rice - easy to customise according to what you have in your fridge! perfect for breakfast, lunch or dinner!

Prep Time 15 minutes
Cook Time 15 minutes
Total Time 30 minutes

Ingredients

  • 5 eggs, lightly beaten
  • 6 slices bacon, diced or roughly chopped
  • 1 medium onion (200g), chopped
  • 1 4x3cm piece of ginger, peeled and grated
  • 3 cloves garlic, minced
  • 4 cups cooked white rice
  • 2 tablespoons soy sauce
  • 1 1/2 cups cooked green peas
  • 3 green onions, finely sliced

For garnish:

  • Freshly chopped cilantro
  • 2 green onions, finely sliced.

Instructions

  1. Heat a 30cm non-stick skillet over medium heat and cook the eggs like an omelette. When the first side is cooked (there is no liquid egg on top), flip and cook until the second side is done.
  2. Remove from the pan and allow to cool while you prepare the rice.
  3. In a large wok over medium heat, cook the bacon until crispy. Remove bacon from wok and drain on a paper towel.
  4. Remove all but one tablespoon of bacon fat from the wok and return to medium-high heat.
  5. Sautée the onion, garlic and ginger until fragrant (about 3 minutes).
  6. Lower heat to medium, then add the peas and stir until the peas are coated in the onion mixture.
  7. Add the rice and stir until rice is heated through.
  8. Add the soy sauce and stir through.
  9. Lower the heat and put the lid on while you chop the egg.
  10. Chop the egg into small pieces.
  11. Remove the lid from the wok and add the bacon, then the egg, then the green onions and mix well.
  12. Garnish with extra green onion and chopped cilantro.

    I’ll admit that I ate this for breakfast when I made it for this post. It’s actually a pretty great meal whatever the time of day. I mean bacon and eggs with rice and peas? It doesn’t get much better than that, right dad? Happy Fathers’ Day XO

    2. Hey kiddo…. loved the post, love the dish and can give you 100% mark for memory.
      Indeed, my skills in the kitchen leave off precisely where eggs and bacon preps end (eggs, soft over easy as they say in your part of the world; bacon crispy but not burnt; unbuttered light brown toast).

      This looks fabulous. I’d eat it for breakfast, lunch, and dinner… In fact, I think we might have it one day this week! I have some lovely bacon from the local farmer’s market that’s just begging to be cooked!

    4. I love the look of this dish and next time I make breakfast for dinner I’m going to try it. Loved your Dad’s comment and like me, he likes his bacon crispy but not burnt! I like that you did this all in a wok and especially that you did the bacon in it. (prefer my bacon fried rather than oven baked)
