Finally, it really feels like summer is here. On my way home from work last week, I noticed the distinctive smell of BBQs cooking meals as I walked along my street and for me, that really spells the proper start of summer. How appropriate because this month over on the Sobeys Better Food Lovers’ Blog, we’re talking grilling! One of my favourite things to BBQ (well, apart from pizzas which might just be my new favourite thing!) is steak. We don’t eat a lot of red meat these days – subscribing to the notion of “less is more”, meaning that we’d prefer to have a really decent quality meat less often than eat a lesser quality product more often. So when we have a steak dinner it’s a total treat. And, of course, our favourite way to cook them is on the BBQ.
I’m a bit of a purist when it comes to how I like my steak cooked – really, just rubbed with a little olive oil and salt and pepper before grilling is my preferred way to cook a really fabulous cut of meat. Where I like to get creative, however, is with what I serve alongside the steak. Normally, a fabulous green salad is a given, but for a special treat, I might make some oven-baked “fries”. No recipe needed – just a few simple directions:
- Pre-heat the oven to 450˚F.
- Slice some potatoes into “fry” shapes.
- Parboil them for 10 minutes.
- Drain and pat dry (this is important).
- Place the wedges in a single layer on a baking tray.
- Season with coarse salt and freshly-ground pepper and a drizzle of olive oil (make sure all the wedges have a little oil on them)
- Bake them until they are crispy (about 45 minutes depending on the thickness of the wedges).
And what to serve with this decadent side? Why my homemade mayonnaise, of course…
