Les Petits Chefs make Chocolate Custard Twists

This week in Les Petits Chefs baking club, we made a favourite recipe from French Food for Everyone: le goûter (after-school snacks)!

Torsades au Chocolat (Chocolate Custard Twists) are the sort of thing that always catches my eye at the bakery in France when I’m only supposed to be picking up bread 😉 Inevitably, one will make its way into my order and will be enjoyed as breakfast or mid-morning – they’re so good I don’t know I can wait until l’heure du goûter! And while these are great in the morning, they are an excellent on-the-go snack to eat rushing from school to extra-curricular activities. Holding to eat them in the paper bag you buy them in means that you don’t get custardy/ chocolatey hands!

This was a perfect recipe to make with the baking crew because, once the crème pâtissière (custard) is made, it’s really a matter of assembling – a perfect project to keep little hands busy! I made the custard during my lunch break because it’s easier to work with if it’s had a bit of a rest in the fridge.

So, come club time, all we had to do was roll the pastry…

Spread the custard evenly across the pastry…

Add some chocolate chips…

Fold the pastry over and gently seal it, then cut strips…

(you’ve never seen such careful measuring as kids who all want the same-sized pastry!)

Then we got to twist!

While we waited for these to bake, we made a small batch of the custard which everyone got a small spoonful of. It was “VERY good” apparently!

And the result of our baking?

Same pastry, same custard, different groups! We learned about the importance of working quickly with puff pastry and not letting it get too warm 9and also not rolling it to an inch of its life!). the twists on the right were handled with a bit more care but the ones on the left were no less delicious!
