Tuesdays with Dorie: Copenhagen Rye Cookies with Chocolate, Spice and Seeds from Baking with Dorie

This week’s Tuesdays with Dorie recipe comes from Baking with Dorie. Copenhagen Rye Cookies with Chocolate, Spice and Seeds is a bit of a mouthful to say but actually come together very easily with (mostly) ingredients I normally have on hand. The “rye flour” from the title isn’t actually that significant, there is more all-purpose/ plain flour in these than rye so you can’t really taste it that much. I don’t like cardamom in baked goods so I used more coffee and cinnamon and the coffee flavour in these was pronounced which I liked. The seeds the recipe calls for can be poppy, sesame, sunflower, flax or other grains like millet or buckwheat.

We had sunflower seeds on hand so that’s what I used. Dorie says the dough behaves differently depending on if you bake it immediately or if you let it rest in the fridge. We didn’t have space in the fridge so I baked right after I made the dough and LOVED how the cookies spread into thick, soft, chewy cookies. I topped some with seeds…

These were a hit and I think I’d definitely make them again maybe just without coffee and seeds to see what they are like as an actual chocolate chip cookie?

  1. Beautiful photo…they have such a lovely color and your toppings are so fun…Mark likes the ones with the chocolate chips on the top, so I made a note to do that next time. He really liked the flavors in this cookie…he has a lot of cookie eating to do as I made the entire recipe for once.
