Cook the Book Fridays: Holiday Fish Soup from Everyday Dorie

This week’s recipe for Cook the Book Fridays comes from Dorie Greenspan’s cookbook, Everyday Dorie. Holiday Fish Soup wasn’t something I was excited to make but I knew that Neil would enjoy it! I also figured it would be easy enough to make a small quantity (and leave things like mussels out of my portion) and it came together quite quickly. AND the broth with all the aromatics made the house smell DIVINE!

So, about that broth…. scallions, garlic, shallot, lemongrass, ginger, red chile pepper, lime zest, white wine, and broth that you cook down then strain off all the ingredients to leave a clear, aromatic broth to which you add the seafood and vegetables. It smelled and tasted FANTASTIC!

About that seafood and vegetables. Dorie offers suggestions – mussels (ew, but I WAS going to add them – our fishmonger was out on the day we made this so it was a moot point!), prawns, head-on prawns, cod, sweet potato, scallions, mushrooms. I doubled up on the prawns and the cod to make up for the lack of mussels and we BOTH enjoyed it (I like prawns and cod) but I don’t know I would make it again as it’s a lot of steps for a simple dish. I WOULD say it lends itself to all sorts of seafood – I’m thinking lobster chunks, clams if you like them, razor clams (I added some canned razor clams to Neil’s serve) etc… and this IS a lovely soup to serve to a crowd as everyone can serve themselves whatever portion of the seafood and veg they like then pour over however much broth they want. We served this with buttered baguette and it was pretty great!
